What do the OIV Regulations provide?
The OIV resolution OENO-394A-2012 offers solutions to reduce the alcohol content of wine, responding both to market demand and the need to preserve the natural balance of wines.
To achieve this goal, oenologists can use physical techniques, such as vacuum distillation and selective membrane processes. There are also dealcoholized wine-based beverages that do not fall into these categories and are subject to more permissive regulations.However, they cannot be called “dealcoholized wines” or “partially dealcoholized wines”.

How is a dealcoholized wine produced?
Selection of the wine: not all wines are suitable for dealcoholization.
Dealcoholization of the wine: choose the technique based on the objective and the constraints.Two main methods are used (and their variations): reverse osmosis (which does not allow total dealcoholization) or vacuum distillation / evaporation.
Restoring the balance: compensating for the lack of alcohol, correcting any defects.
Preparation for bottling: Stabilization (since the product is delicate) and possible gasification.
